High density plantations for the competition aspect and secondly to reduce the number of buds/vine. The inter row area is grassed down with a red fescue grass. Leaf plucking was carried out on the shaded side of the vines. Crop thinning took place after flowering (40% was dropped to the ground) A very rigourous selection of the best micro terroies on the property has been made to get the highest potential flavour-intensive bunches of grapes. |

The must was fermented using native yeast from the vineyard. We practised 8 pump overs per day (with Delestage) in the early stages of fermentation this dropped off to once a day at the end. 7 days of maceration after fermentation.The barrels are filled and racked 3 times, using the natural force of gravity. |

This wine has a very deep intense colour, nearly ink due to the excellent ripeness of the grapes.- The nose exodus warm aromas of confit black currants and strawberries.-In the mouth opens up ample to balanced classy tannins and finishes with a return of fruit |
